Mission BBQ Cowgirl Cookies

Baked Goods, Cookies

Ingredients

3 cups All-Purpose Flour

1 tablespoon Baking Powder

1 tablespoon Baking Soda

1 tablespoon Ground Cinnamon

1 teaspoon Salt

1 1/2 cups Butter, room temperature 1 1/2 cups White Granulated Sugar

1 1/2 cups Brown Sugar, packed

3 Eggs

1 tablespoon Vanilla Extract

3 cups Semisweet Chocolate Chips 3 cups Old-Fashioned Rolled Oats 1/2 cup Sweetened Coconut Flakes 2 cups Pecans, chopped

Directions

Preheat oven to 350°F with racks spread out into the upper and lower thirds of the oven.

In a large bowl, vigorously mix flour, baking powder, baking soda, cinnamon and salt.

In 8-quart bowl, beat butter on medium speed until smooth, light and creamy, about 1 minute.

Gradually add the sugars and beat to combine, about 2 minutes.

Add the eggs, one at a time, beating after each.

Add the vanilla.

Reduce the mixer to low and add in the flour mixture, until just combined.

Add the chocolate chips, oats, coconut and pecans, until just combined.

For large cookies, drop about 1/3 cup of the dough onto ungreased baking sheets, spacing 3 inches apart.

Bake in 350°F oven for 16-20 minutes, until the edges are slightly browned. Rotate the baking sheets half way through, top to bottom, and front to back.

Remove the cookies from the oven and allow them to cool on the baking sheets for 5 minutes. Then move them to a rack to cool completely.
